Creamy Oven-roasted Tomatoes

Ingredients
500g cherry tomatoes
2 tbsp olive oil
Chilli flakes
1–2 garlic cloves
Dried oregano
Stracciatella (or burrata)
1 pot fresh basil
Grated parmesan
Salt and black pepper
Good bread for serving
Method:
Prepare the tomatoes
Halve the cherry tomatoes and place them in an ovenproof dish. Drizzle with olive oil and season with salt, pepper, chilli flakes, finely chopped garlic, and oregano.
Roast in the oven
Place the dish in the oven at 220°C for about 20–30 minutes, until the tomatoes are soft and begin to burst. If you want a saucier consistency, you can lightly press some of the tomatoes with a spoon.
Toast the bread
Slice the bread and toast it in the oven or in a frying pan until golden and crispy.
Serving
Place the warm tomatoes on a platter and top with grated parmesan, fresh basil, and a generous amount of stracciatella. Serve immediately with the toasted bread.
