This is what you need

Ingredients

  • 3 eggs
  • 200 ml sugar
  • 150 ml Abuelaz Olive Oil N°1
  • 150 ml milk
  • 300 ml plain flour
  • 2 tsp baking powder
  • Zest + juice of 2 lemons
  • 1 pinch Abuelaz Himalaya Salt

Glaze:

  • Icing sugar + lemon juice

Step-by-step

Method

  1. Heat the oven to 175°C. Grease a tin.
  2. Whisk eggs and sugar until fluffy. Add olive oil and milk.
  3. Fold in flour, baking powder, lemon zest, lemon juice and salt.
  4. Pour into the tin, bake 35–40 min. Drizzle the glaze once the cake has cooled.

Tip: Olive oil in baking is an old Mediterranean trick – it brings moisture and a soft, round flavour. Use Olive Oil N°1 with its mild profile so the lemon
takes centre stage.
