Refined Olive Oil: Meaning, Differences, and Kitchen Tips
Refined olive oil often comes up in questions such as "what is refined olive oil?", "what does refined olive oil mean?" and "is refined olive oil healthy?".
In Short
Refined olive oil is an oil that has been purified (refined) to become milder in taste and aroma and more consistent in quality.
It is often used in cooking when you want an oil that doesn't overpower the flavor and works well for frying and deep-frying.
An important detail: the "mild olive oil" many people buy in stores is often not 100% refined, but "olive oil," which is a blend of refined olive oil and (extra) virgin olive oil.
The blend allows the oil to retain some olive character while still being mild and easy to use.
In this guide, we'll go through what refined olive oil is, how it differs from extra virgin, what you can expect in terms of taste and use – and how to choose the right oil for frying, baking, and everyday cooking.
What is refined olive oil?
Definition in brief
Refined olive oil is olive oil that has been refined to reduce defects and make the oil more neutral in taste, smell, and color.
EU descriptions also state that refined olive oil is the product obtained when refining a defective virgin olive oil (e.g., lampante), and that it is not intended for direct sale to consumers. Read more here
What does “refined” mean in practice?
Refining: what happens to the oil?
Refining means that physical and/or chemical processes are used to remove undesirable odors/flavors and correct certain quality issues.
Common terms mentioned in connection with refining (good to recognize):
- Neutralization (reducing free fatty acids/acidity)
- Bleaching
- Deodorization (removing odor/flavor)
The point is that the oil becomes more neutral and consistent.
Flavor profile: mild olive taste
Many Swedish guides describe that refined oil itself can be perceived as almost tasteless, and that a smaller portion of virgin/extra virgin oil is often blended in to restore “olive character.”

Different types of olive oil (a simple guide)
Extra Virgin Olive Oil
- Mechanically extracted, most aroma and character
- Often fruity, peppery, sometimes bitter
- Common in cold dishes and as a finishing oil
Virgin Olive Oil
- Similar to extra virgin but may have lower sensory quality
- Still mechanically produced
Refined Olive Oil
- More neutral taste
- Not always intended for direct consumer sale in EU descriptions
Olive Oil (Blend)
- Refined olive oil + (extra) virgin olive oil (Abuelaz olive oil)
- Common "mild olive oil" for everyday cooking
Olive Pomace Oil
- A separate category in EU regulations and labeling (sometimes called olive pomace oil)
- Also important to recognize in a retail context
Refined olive oil vs. extra virgin: noticeable differences
1) Taste and aroma
Extra virgin retains more aromatic compounds and has a clearer “grassy/fruity/peppery” profile. Refined/blended is milder and more neutral.
2) Polyphenols and phytochemicals
Scientific reviews describe that virgin oils (including extra virgin) generally have higher levels of polyphenols than refined oils.
Polyphenols are a large part of the explanation for why extra virgin is often highlighted in health contexts.
3) Heat, smoke point, and "stability"
Many choose refined/blended for frying, partly due to the perception of smoke point.
At the same time, research shows that smoke point alone does not explain how well an oil tolerates heating; oxidative stability and fatty acid profile play a large role.
Practically in the kitchen: use what provides the right flavor and works for your temperature, but don't let "smoke point" be the only rule.

The use of refined olive oil in the kitchen
Cooking, baking & drinks
As we have mentioned, refined olive oil is an excellent choice for cooking and baking, especially at high heat.
Thanks to its stability at high temperatures, it is perfect for frying and deep-frying, where other oils risk breaking down or losing their flavor.
This type of olive oil can also be used as a vegetable fat in various baked goods and even in drinks.
It also works excellently in dressings and marinades, where it enhances other flavors without overpowering them.
Choose refined olive oil for the best user experience
Refined olive oil not only offers high quality and versatility, but also contributes to an improved user experience in the kitchen.
